Dessert sushi rolls topped with berries and fruit, with fried banana, nori and rice visible in a cut end at Tokio Sushi in Novi Sad.

The sushi roll had fruit on top. Berries and chopped fruit were piled over each piece, with little mint leaves scattered among them and a red sauce that had turned parts of the rice pink.

Inside was fried banana. This was dessert, at Tokio Sushi in Novi Sad, in northern Serbia.

Beside the counter, vertical Japanese lettering said “Welcome to Tokyo”.

A little more elaborate

Dinner came first. Festive greenery hung around the counter, and a large octopus stretched across the wall above red benches.

An octopus above the diners. Hokusai once gave an octopus a far more intimate role in one of his erotic prints; by his standards, this was a quiet evening.

Four onigiri—Japanese rice balls—stood upright in a neat row, their rice speckled with black sesame and each finished with a little sauce and fish. They were as enjoyable to eat as they were to look at, and the soy sauce brought back the taste of meals at home.

The wasabi had been whipped and piped into a green rosette. I have heard close to ten people describe mistaking wasabi for pea purée. On this plate, I could see how it happened. The pickled ginger next to the wasabi had been arranged into a flower of its own.

Beneath the plate, the placemat had something to say about appetite in a crowd of languages. One of them was Japanese.

Unfamiliar sushi

After a wasabi rosette and a ginger flower, fruit on top of sushi seemed less like a leap than the next step. The dessert was slatke rolnice sa sezonskim voćem: sweet rolls with seasonal fruit. Fried banana sat at the centre of each piece, wrapped in a ring of nori and an outer layer of rice. The fruit was both filling and topping.

For all the rice I had eaten in Japan, I had rarely met it alongside bananas and berries. The roll looked familiar; I had no idea what it would taste like.

The berries brought a rich, concentrated flavour. The fried banana and crisp mint added crunch, while the rice gave each bite a softer, chewy texture. It was a new taste for me, and a very good one.

The sign had welcomed me to Tokyo.

This was one idea I would happily take back to the real Tokyo.
